Sip & See Recap: The Nibbles

Hello again. Hoping everyone had a most excellent long weekend, full of porch sitting and potent beverage-drinking. Now that we've made it back from the Texas shore -- and made it through the end of last week -- I figured I'd hit y'all back with the nibbles we served at last weekend's Sip & See.

We went for a casual Southern theme of finger foods (the best for eating whilst holding children) that were also kid-friendly. (So more hot-dog, less cucumber sandwich.) I've linked to recipes for everything, and I tried all of it because poison-testing. A++ would do again.

"Momosa" Bar

A Momosa bar, as you might imagine, is a mimosa bar but with puns. We did raspberry lemonade, mango and OJ along with a load of frozen berries to keep drinks cold without watering them down. (Thanks to every friend's mom's Bunco group ever for passing along that trick.)

Pigs in Blankets

These are the easiest thing in the world so I didn't bother to document them. It involves little smokies, crescent rolls and the most basic level of hand-eye coordination. (Pro-tip: Also phenomenal with chorizo/when hungover.)

Mini Mac 'n Cheese

We adapted this recipe to much applause. You need: Ritz crackers, white cheddar, salted and unsalted butter, macaroni, eggs, milk, sour cream and salt. The recipe I linked calls for Boursin garlic and herb cheese, which we made just one batch with. It was great, but I actually preferred the straight cheddar. And, as with all things, these are better with bacon. You can also add some red pepper flakes for spice, but we went easy on that for the little ones.

The process is pretty simple (if messy):

Preheat the oven to 350. Also, cook and strain your macaroni. (You need about 5 cups.) 

  1. In a large bowl, combine crushed Ritz crackers, 1 cup shredded white cheddar and 4 tbsp melted unsalted butter.
  2. Divide your mix between greased muffin cups and firmly press your makeshift crust into, you know, a crust.
  3. In another bowl, combine cooked macaroni with 1/2 cup shredded white cheddar and 2 tbsp butter.
  4. In ANOTHER bowl, combine 2 eggs, 1/2 cup milk, 1/4 cup sour cream, and salt. Stir.
  5. Add this most recent mixture to the macaroni, mixing until it appears edible.
  6. Fill the muffin cups with your macaroni mixture. Bask in your own glory. (Realize that is just heat from the oven.)
  7. Garnish each muffin cup with remaining cheddar and, if you're smart, bacon.
  8. Bake until lightly golden on top, about 20-25 minutes.

Rice Krispies

We made old fashioned homemade Rice Krispie treats which are, as is understood by all of mankind, ALWAYS better than the store-bought. People on Pinterest made theirs with pink and blue marshmallows but we are very gender progressive/also could not find these.
