Chicken Crock Pot Stir Fry

Never heard of it?  I hadn't either, but long days at work made me come up with another creative way to use the easiest cooking device known to mankind: the crockpot! I adapted this recipe from one on The Comfort of Cooking's website, but didn't have all the ingredients (per usual.) Let the substitutions begin!

Ingredients

  • 1 lb. chicken tenders
  • 1 diced onion
  • 2-3 cloves of garlic
  • 1/2 cup honey
  • 1/2 cup pizza sauce
  • 1/2 cup soy sauce
  • splash of olive oil
  • salt and pepper
  • 1/2 tsp. red pepper flakes
  • 1 carton brown mushrooms
  • 1 bundle of asparagus
  • brown rice

The Steps:

  1.  In a bowl, combine the diced onion, garlic, honey, pizza sauce, soy sauce, olive oil, salt, pepper, and red pepper flakes.  Mix together well.
  2. Place the chicken in the crock-pot.  Pour the mixture over it, then cook on low for 2-3 hours.
  3. Chop up the mushrooms and asparagus.  Add them to the mixture in the crock-pot.  Continue cooking it on low for another hour.
  4. Cook the brown rice per the brand's directions. I just cooked 2 servings at a time, one for myself for dinner that night and one for lunch the next day.  (This is great reheated).
  5. Plate the rice on the bottom, then pull out a chicken tender or two and shred it on top.  Finish it off with some of the veggies. Spoon a couple spoonfuls of the sauce over the top and you're ready for a delicious and healthy dinner!
