Never heard of it? I hadn't either, but long days at work made me come up with another creative way to use the easiest cooking device known to mankind: the crockpot! I adapted this recipe from one on The Comfort of Cooking's website, but didn't have all the ingredients (per usual.) Let the substitutions begin!
Ingredients
- 1 lb. chicken tenders
- 1 diced onion
- 2-3 cloves of garlic
- 1/2 cup honey
- 1/2 cup pizza sauce
- 1/2 cup soy sauce
- splash of olive oil
- salt and pepper
- 1/2 tsp. red pepper flakes
- 1 carton brown mushrooms
- 1 bundle of asparagus
- brown rice
The Steps:
- In a bowl, combine the diced onion, garlic, honey, pizza sauce, soy sauce, olive oil, salt, pepper, and red pepper flakes. Mix together well.
- Place the chicken in the crock-pot. Pour the mixture over it, then cook on low for 2-3 hours.
- Chop up the mushrooms and asparagus. Add them to the mixture in the crock-pot. Continue cooking it on low for another hour.
- Cook the brown rice per the brand's directions. I just cooked 2 servings at a time, one for myself for dinner that night and one for lunch the next day. (This is great reheated).
- Plate the rice on the bottom, then pull out a chicken tender or two and shred it on top. Finish it off with some of the veggies. Spoon a couple spoonfuls of the sauce over the top and you're ready for a delicious and healthy dinner!
